Filet Mignon Bites with Creamy sauce Albert are the right elegant appetizer to serve at your next party. Tender bites of fillet are wrapped in bacon and served with a thick and tangy sauce Albert.
With the vacation season fully effect, I’ve been thinking of more ways to pair appetizers with wine – besides the standard cheese platter. I wanted to try to to something fancy enough to match with a Christmas party or a replacement Year’s Eve Bash. And, it doesn’t get far more fancy than fillet .

But, let’s not ditch the final touch – The creamy sauce Albert . consider this sauce because the star on top of the Christmas tree or the champagne toast in the dark . It’s the finishing and expected touch – Tangy, spicy horseradish, combined with creamy greek yogurt, a touch of breadcrumbs to thicken things up a touch , and a few unsweetened applesauce to feature an additional layer and a touch of sweetness to the combination . It’s a star of this dish – Outshined only by the smoky bacon and tender fillet . But those two things can really outshine anything, right?
And then comes the wine. When we’re hosting company, i prefer to supply a minimum of a few of wine pairing options. First, because not everyone has an equivalent taste in wine. Second, because it’s fun to taste a few different wines with the food, to ascertain how each can compliment the food differently.
INGREDIENTS:
Filet Mignon Bites:
- 1 pound beef tenderloin
- 1/2 pound thin-sliced bacon
- Salt and pepper
- 2 tablespoons Worcestershire sauce (for basting)
Creamy Horseradish Sauce:
- 6 ounces greek yogurt
- 2 tablespoons prepared horseradish
- 1/4 cup breadcrumbs
- 3 tablespoons unsweetened applesauce
INSTRUCTIONS:
Filet Mignon Bites:
- Preheat oven to 450 degrees.
- Pat tenderloin dry and cut into 1-inch cubes. Cut each strip of bacon in half and wrap around the steak cubes. Secure with a toothpick. Season each side of the steak with salt and pepper.
- Spray a grill pan, or grill with cooking spray, and warm to medium high heat. Sear the steak cubes for a 1-2 minutes on each steak side. Place on a baking sheet with the bacon side lying down. Bake for 2-3 minutes, flip the steak bites over to the other bacon side, and bake for an additional 2-3 minutes, until cooked to your liking. Brush with Worcestershire sauce.
Creamy Horseradish Sauce:
- Combine the greek yogurt, horseradish, breadcrumbs and applesauce in a medium bowl. Season with salt and pepper to taste.
