  • 2 tbsp olive oil
  • 18 oz russet potatoes 2 medium, cut into 1/2-inch chunks
  • 2 1/2 tbsp unsalted butter melted, divided
  • 1.5 oz lemon 4 slices
  • 16 oz fresh asparagus
  • 1.5 oz grated Parmesan cheese
  • 2 tbsp chopped parsley optional

INSTRUCTIONS:
Prep:

  1. In a bowl, combine paprika, garlic powder, ground black pepper, salt, and dried oregano. Mix to make a spice blend, divide it into 3 equal parts and put in 3 small bowls. Set aside.
  2. Line a baking pan with parchment paper.
  3. Put a piece of chicken breast on a cutting board. Using a sharp knife, cut three-quarters of the way into the chicken breast to create a pocket on the side. Repeat with the remaining pieces and put them on the lined baking pan.
  4. Season the chicken with one-third of the spice blend. Sprinkle evenly on the top and inside the pockets. Drizzle olive oil over the chicken. Rub the chicken pieces to distribute the oil and seasoning evenly.
  5. Arrange potatoes around the chicken. Season with the one part of the spice blend and drizzle 1 ½ tablespoon of melted unsalted butter over the potatoes. Toss to coat evenly.
  6. Cover the baking pan in cling film and let the chicken and potatoes marinate for 45 minutes.

Cook:

  1. When the chicken has been marinating for 35 minutes, preheat the oven to 375°F.
  2. After 45 minutes, unwrap the pan of chicken and potatoes and put it in the oven. Bake for 20 minutes.
  3. Take the pan out of the oven. Move the potatoes to one side of the pan.
  4. Arrange asparagus on the other side of the pan. Drizzle the remaining 1 tablespoon of melted unsalted butter and sprinkle the rest of the spice blend on the asparagus. Toss to coat the seasoning evenly.
  5. Put lemon slices on the chicken (this will help prevent the chicken from drying out).
  6. Put the pan back in the oven and bake for 10 minutes.
  7. After 10 minutes, take the pan out. Transfer the lemon slices to asparagus. Sprinkle grated Parmesan cheese over the chicken and potatoes.
  8. Return the baking pan to the oven and bake for another 5 minutes or until the cheese is golden brown.
  9. Once the time is up, remove the chicken from the oven. Garnish with freshly chopped parsley. Transfer to a plate and serve.
